You know how Jerry Seinfeld's wife wrote that book about disguising vegetables in other foods so kids will eat them? You don't need to go out of your way to cut up cauliflower beyond recognition. Just pickle it! Kids love pickled stuff.
I watched the kids at the Portland Fermentation Festival munching down pickled veggies like some kids eat handfuls of Cracker Jacks. Pickling different kinds of vegetables is a creative way to get adults to "eat their veggies" too.
The Pickled Cauliflower recipe is easy:
1.) Cut up veggies and put them in a jar.
2.) Pour a brine over the top.
3.) Wait a few days for better flavor.

These can be made as spicy as you like them, or leave the red pepper flakes out. The other spices, along with apple cider vinegar, sea salt, and a touch of sugar, still pack a wallop of flavor.
The pickled vegetable mixture is great on an antipasti platter, eaten with cheese & crackers, or chopped up a bit and put on a burger, but don't chop them up too much...unless your Jessica Seinfeld.
Helpful hint. If you don't have time to prep vegetables, or you really don't like raw cauliflower, you can just buy pre-cut vegetables, like these carrots.
Be sure to dump out the water first, then pour the cooled brine right into the container! Um...you got out of peeling and cutting veggies but you still have to MAKE the brine.
