I think Mission figs are so beautiful. Their skin is as soft as velvet, and they are such a pretty color too. But did you know that fig trees have no blossoms on their branches?

The blossom is inside of the fruit!

  A zillion tiny flowers produce the crunchy little seeds that give figs their very own unique texture.

Just de-stem and quarter them, add some water, cover tightly, and cook the figs until they're soft, about 5 minutes.

~~~~~~~
Mash them a bit, add some sugar, lemon juice and maybe, if you're feeling sassy, add a little Balsamic vinegar.
And in no time at all, you have a delightful, and very healthy Sweet (and possibly sassy) Fresh Fig Jam!
Crostini, topped with goat cheese and Sweet & Sassy Fresh Fig Jam.
*FYI: Figs are high in natural and simple sugars, minerals and fibre. They contain good levels of potassium, calcium, magnesium, iron, copper and manganese.
