    Maui Coffee Jelly

For the first time since I started my blog, I'm taking a couple weeks off from posting. I'm on vacation with my family and since our accommodations have intermittent internet access, it might be another week or so before I post again.

I just wanted to share a photo I took yesterday at an impressive gift shop/coffee roaster called Kona Mountain Coffee. Lots of unique high-quality local products on the shelves here, including Maui Coffee Jelly.

Leaving in a few minutes for our next adventure, deep sea fishing with Humdinger Sportfishing Charters. Hopefully we'll get lucky out there today and in a few hours we'll be eating the fish we caught for dinner.

Good on ya for taking some family time off during the holidays, but when you get back, some of us just *need* to have a recipe for making our own coffee jelly!

Glad to hear I'm not the only one who thinks I *need* to figure out how to make Coffee Jelly.

I also met a woman at a farmers market who was selling some wonderful jams & jellies...she had a tasty coffee jelly concoction as well as a "red bean" jelly, which is made from the coffee beans before they're roasted (I think). It was really good. She told us that recent studies show the antioxidant properties of coffee comes mainly from the red part of the coffee beans....wait...aren't coffee beans green before they're roasted?
Oh dear. I need to do some research before I post anything else about coffee jelly!

Thanks for reading my blog Diana :)
